Select Beef has the Lowest Fat Content
Of all the grades this one has the lowest amount of fat in the meat. This beef has the most consistent quality but because of its very lean meaty-ness it can taste less robust than the other grades with higher fat content. This meat is sold to the lower end meat retailers or might go into a taco or some ground up into a sauce. With the right person and recipe in the kitchen this is still an enjoyable meat.
